Recipe 1: Kabsah

Kabsah is a traditional and a famous meal in Saudi Arabia (where I am from).Also, It can be found served with a little different recipes in countries such as Qatar, Oman, the United Arab Emirates, Bahrain and Kuwait.

It consists of either lamb or chicken and rice and other spices (Arabic spices). Making Kabsah is very easy if you have the right ingredients. I make it mostly every day because it is the best!

Ingredients

  • Onion
  • Garlic
  • Tomatoes or tomato paste
  • Vegetarian oil
  • Choice of meat
  • Water
  • Spices (preferably Arabic ones called Boharat)
  • Salt
  • Rice

STEP 1

Cut the onion, garlic, and tomatoes or one big spoon of tomato paste. (They should be in small pieces)

STEP 2

Put Vegetarian oil in the cooking pot, then add the onion and stir it till it turn into a golden color. (The heat should be between Med and High)

STEP 3

Add the garlic and the tomatoes with the onion and stir them for about 5 minutes.

STEP 4

Now, add the meat (chicken or lamb) to the same pot, add some water (the water quantity should cover the meat), add the spices and salt then cover the pot with its lid.

STEP 5

Let it boiling for 20-30 minutes, once you make sure that the meat has been fully cooked, you can take it out of the pot and put aside or leave it in.

STEP 6

Rinse the rice and put it in the same cooking pot and make sure that the water is a half inch above the rice. (The heat should be between Low and Med)

STEP 7

After 15 minutes, open the lid and make sure that the rice fully absorbed the water and soft.

STEP 8

Take it out and serve if in one big plate (Saudi way) or small individual plates adding the meat on top of the rice. You can serve it with lemon or tomatoes with onions salad.
